Main duties and responsibilities


  • Assists the Restaurant Manager in directing the brigade service teams on a daily basis to ensure smooth operations, consistent excellence and guest satisfaction;
  • Develops positive relations with guests and team members, whilst remaining professional and service oriented at all times;
  • Contributes to the development of food & beverage product/offering to ensure that the restaurant continues to evolve, improve and prosper;
  • Supports in planning, directing, controlling, coordinating and participating in all areas and activities of the department, working closely with the Restaurant Manager and the F&B management;
  • Maintains a daily liaison and partnership with the kitchen team to share information, best practice and ensure a harmonious relationship between culinary and service teams;
  • Supervises departmental food & beverage stocks and requisitions so to ensure daily service requirements are met efficiently;
  • Keeps a close overview of the wine and beverage stocks also conducting regular checks so that items are well kept and adequate to the business;
  • Is responsible for the department people daily operations, participating in the delivering on-the-job training;
  • Ensures appropriate processes and systems are in place to control costs, delivers both revenue and profit margins as per budget projections;
  • Helps in obtaining maximum control of expenditure through effective use of manpower and physical assets;
  • Organises brigade schedule and supervise the team with a hands-on approach, ensuring the correct completion of all required tasks in a timely fashion;
  • Assists his/her HOD in implementing regular communications with the brigade through daily line ups, 1:1’s and monthly full departmental team meetings;
  • Attends any meeting required according to the planned schedule;
  • Checks that pertinent back of house areas are always kept clean and in good working order;
  • Apply all safety and hygiene standards so that they are met at all times and that cleaning schedules and related equipment are well executed and organised.

Requirements


  • 3 to 5 years’ working experience in a similar position and in upscale restaurants or within the luxury hospitality industry;
  • Hospitality degree, or equivalent, appreciated;
  • Must be fluent in Italian with and English. A third European language would represent and advantage;
  • Strong leadership skills and service oriented and guest focused, talented in people management, performance driven, assertive and pleasant personality;

  • Drafting of procurement contracts and orders to suppliers and contractors;

Responsibility


  • Organize, supervise and provide guests of the resort and villas/farms with an excellent Room Service, according to the Company's directives and based on operational standards and within the required times;
  • Personally deal with requests from VIP guests, answering possible questions and providing them with the necessary assistance to guarantee attentive and quality service;
  • Select, train, evaluate and manage the operational staff of the Room Service department, always acting as a model of correctness, courtesy, professionalism and competence;
  • Supervise and maintain correct operations by implementing department procedures in a timely manner, ensuring the right number of daily allowances in stock, the proper functioning of the equipment used in the department and the correct application of HACCP and Safety directives;
  • Collaborate with the management of F&B and other catering outlets (e.g. Banqueting department) in the creation of special events (e.g. events relating to catering in villas and farmhouses or in suites), ensuring maximum collaboration, the best customer service guests and the correct coordination of the resources involved;
  • Conduct daily briefings and regular department meetings so that Room Service staff are always up to date and well informed on the events and services to be provided;
  • Carry out administrative tasks such as planning the department's working hours, monthly inventory and replenishment of the correct stocks, optimizing all department costs, at the same time looking for every opportunity to improve revenues;

Role Description


  • The Chef de Partie takes an active part in the daily operations of the kitchen. He dedicates himself to the preparation and presentation of the dishes following the established recipes;
  • Is responsible for the assigned lot, for its cleanliness and the equipment in use; completes all tasks taking into account the established timescales;
  • Coordinates the Commis in its match ensuring that the preparations are carried out according to the directives;
  • Supports in the preparation of food inventories and in the management of orders by monitoring the goods upon receipt, in cooperation with the manager;
  • Knows and applies the correct HACCP regulations;

Role Description


  • The Chef de Rang takes care of providing table service, based on the operational standards present in the Restaurant;
  • Ensures that the guest receives adequate attention and information on the culinary philosophy and that overall he or she enjoys the restaurant experience;
  • Prepares the mise en place and sets up the work spaces before/after each service;
  • Takes orders and relates to the guest in a friendly and professional way, explaining and suggesting the dishes on the menu;

Responsibility


  • Ensure smooth operation and efficiency of the Facility Department, leading the Maintenance Team in the day-to-day operations of the estate and its business units, including its resort premisses, while respecting service standards, equipment, and work schedules;
  • Plan, direct, control, coordinate and participate in all areas and activities of the Facility department, liaising with our internal Project Division and their consultants (i.e. interior designers, architects, quantity surveyors, mechanical/electrical/plumbing engineers, lighting consultants, audio visual consultants and procurement agents);
  • Develop and maintain effective administrative and communication systems and requirements, following up with stakeholder about specific refurbishments and maintenance projects and their goals;
  • Implement and where necessary upgrade systems as required by the company product standards;
  • Diagnose, maintain and repair equipment ensuring data record is kept for preventive maintenance of mechanical, electrical, fire & safety, civil, guest rooms, public area, kitchen, back of house and audio visuals;
  • Overview and coordinate daily checks to the technical implants of the estate and its business units, communicating with the resort management and its Housekeeping department to prioritize maintenance tasks in case of requests for guest rooms and hotel public areas;
  • Direct and oversee the functionality and safety of the facility, (i.e. buildings, mechanical plants, electrical systems, heating and cooling systems, life safety systems) in line with regulations;
  • Prepare Capital, Repairs and Maintenance budgets for the Facility Department and report to the CEO and General Manager as necessary;
  • Report and monitor key performance indicators for the Facility Department and undertake corrective actions to improve equipment inventory, quality audits, productivity, and other assigned goals;

  • Supervise cost control programs through energy saving schedules and manage energy conservation programs to minimize expenses;
  • Manage its team’s related activities, including allocation of workloads, team working schedules, evaluations, maintaining good motivation as any required disciplinary matters.

Requirements


  • Bachelor’s degree in Electrical or Mechanical Engineering, project management or in an equivalent technical field;
  • A minimum of 5 years’ professional experience in a similar role and across all aspects of the Engineering & Maintenance departments within luxury hotels;
  • Basic competency in engineering management, project engineering encompassing mechanical, electrical and civil (structural) and other relevant scopes;
